A sense of the rhythm
The first half of the week moves slowly between Etna's vineyards and Palermo's markets, with long lunches and unscheduled afternoon hours. Midweek the pace shifts westward toward Trapani and the salt flats of Marsala, then eases into a final day along the coast. Every evening finds you at a table rather than in transit.
Whether to anchor in one property or move between two or three distinct areas
Sicily's culinary geography is genuinely divided — Etna, Palermo and the western coast each reward unhurried time. Splitting between the finest luxury hotels in Taormina or the Etna foothills and a second property in Palermo or Trapani means waking up inside each food culture rather than arriving as a day visitor. For seven nights we generally recommend two bases; the transfer between them by private car along the A19 takes under two hours and can be timed around a market stop in Enna. A single base suits travelers who prefer depth over movement and are content with longer day excursions.
How to do it well
The counsel our advisors give travelers planning this journey:
- Book Etna cellar visits at least six to eight weeks ahead for harvest months of September and October, when producers are working the crush and private access is genuinely limited.
- Palermo's Ballarò market is at its most alive Tuesday through Saturday mornings; we schedule arrival into Palermo no later than Wednesday to secure a full market morning and an unhurried evening in the Kalsa neighbourhood.
- The Aeolian day charter requires a licensed skipper and advance coordination with the port authority in Milazzo — we handle the paperwork, but the booking window should open 30 days out minimum, and earlier in July and August.
- The finest luxury hotels in the Etna wine country fill quickly for the Taormina Arte festival in June and July; confirm accommodation before finalising any other element of the itinerary if those weeks are your target.
